A visit to the mill in full time

Today, an unusual entry. After the first call on the tour - at least the virtual - to a mill in Makow Mazowiecki. Second entry - kind of advertising:) Perhaps some reading post about the cost of baking homemade bread pointed out that I bake bread with flour bought directly in the mill. Until now, the flour was imported by a third party (the Poppy have a piece of ...), but as soon as the opportunity presented itself, I personally have made purchases.


On the occasion of the owner, Mr George Stefanski, showed me around us through the mill, allowed to take some photos, and above all tell a very interesting regarding the production of flour. On that day, the mill has not worked, so in the middle a quiet, cool and very pleasant. Mill located in an old brick building with thick walls, in the middle of the wood is finished. Wooden are "channels", which circulates the grain and flour. Grain, any change in the flour, four times overcomes all floors of the mill!


Mill in Makow manufactures various types of flour (bought spelled, 1850, 650 and 2000, rye, wheat, 850), as well as cereal, bran, etc. Customers are mainly local bakery, but Mr. George said that once the team came up with the Poznan and has purchased several hundred kilograms of flour. This kind of small mills, unfortunately, a thing of the past. Mr. George is retired and can handle this job more just tinkering - there is no one to pass the mill. The current rules (of course the EU) do not allow the wood finishing mills. That is to say - in the old mills they are accepted, while building a new plant, you need to design everything from sheet steel.


I think if someone is serious about baking, it's worth a look around in your area for the mills of this type. Flour is usually produced in small quantities (the yield of this type of mill is about 1500 kg per 8 hour day's wages), it is stale, the prices are attractive, the place you can personally talk to the miller, to see different types of flour.
